TERROIR

Míšky

They are the vineyard site we consider the "Grand Cru" of Polešovice. The limestone soils give the wines a distinct minerality and a fresh, vibrant character. Situated on a slope above the village and facing south, the vines receive perfect sunlight from both sides. Here, we grow Chardonnay.

Nové Hory

This is our youngest vineyard, located just at the western exit of Polešovice. Its dominant feature is the entrance archway built by the vineyard's former owner, Josef Soják. The soils here are mostly loess mixed with sandstone and heavy clay.
We grow Riesling, Silvaner, and Dunaj on this site.

Vinohrady

Our vineyard site located outside Polešovice — to the south of the Slovácko region, in Moravská Nová Ves. Its southern exposure brings higher average temperatures, and the sandy subsoil is ideal for the so-called Bordeaux varieties. We cultivate Merlot and Cabernet Sauvignon here, following organic practices.

PEOPLE

Matouš Forman

He has dedicated himself to wine for over 15 years.
He worked as a sommelier in leading restaurants in Prague and Munich. His deep knowledge and refined palate earned him the prestigious title of Best Sommelier of the Czech Republic in 2021, as well as Sommelier of Moravia in 2022. He gained hands-on experience through two harvests — at Zilvar Winery in Prague and Thaya Winery in Znojmo. In 2023, he spent six months interning in Napa Valley at Clos Pegase Winery.Today, he stands on his own path — together with Walter, he founded a small winery in Polešovice. His goal is to create wines that express the local terroir and bring joy and excitement to everyone who tastes them.

OUR WINES

We strive to intervene as little as possible in our wines. What matters most to us is expressing the terroir — the true character of the place where the wine comes from. That's why we hand-pick all our grapes, use no aromatic yeasts, and leave our wines unfiltered. In our vineyards, we work to sustain life — to belong to nature rather than to rule over it.

Sekt Anna 2022

Our sparkling wine, crafted using the traditional Champagne method.
A blend of Chardonnay and Pinot Blanc, aged for 30 months on fine lees before disgorgement.

Vineyards: Polešovice – Nové Hory / Míšky
Residual sugar: 12 g/l – Brut
Total acidity: 6.5 g/l (tartaric)
Production: 1,000 bottles

BPP 2024

Our very first still wine — a bold Riesling grown on partially slate soils,
Mineral-driven and fruit-forward, combining freshness from stainless steel with depth from partially used oak barrels.

Vineyard: Polešovice – Nové Hory
Residual sugar: 3.3 g/l – Dry
Total acidity: 7.2 g/l (tartaric)
Production: 1,200 bottles

MNČ 23/24

Our red blend of Cabernet Sauvignon, Merlot, and Dunaj.
Each variety was aged separately in large oak barrels. This cuvée combines the 2023 vintage of Cabernet Sauvignon and Merlot with the maiden harvest of Dunaj.

Vineyards: Moravská Nová Ves / Polešovice
Residual sugar: 0 g/l – Dry
Total acidity: 5.6 g/l (tartaric)
Production: 1,300 bottles

Silvaner 2024

Our flagship white wine. Sylvaner historically enjoyed great acclaim in Polešovice, and we aim to restore its former glory.
The wine was aged half in stainless steel and half in used "Mineral" barrels.

Residual sugar: 0 g/l – Dry
Total acidity: 6.2 g/l (tartaric)
Production: 550 bottles

Chardonnay 2024

100% Chardonnay from our "Grand Cru" vineyard – Míšky.
This south-facing site with limestone soils imparts elegance and minerality. Aged in Mercier – Affinity barrels: one new, the rest used, for 8 months.

Total acidity: 6.5 g/l (tartaric)
